Ewelina Brdak has been associated with Ferment Group since 2012, a group that owns 5 premium restaurants in Warsaw (Butchery&Wine, Le Braci, Kieliszki na Próżnej, Koneser Grill, Rozbrat 20), 1 restaurant in Gdynia (Butchery&Wine Gdynia), 2 boutique wine shops (Grono, Wine Corner Biały Kamień), and a wine importer (Vini e Affini).
Between 2012 and 2015, she gained knowledge and experience under the guidance of outstanding managers and sommeliers who formed the first service team at Butchery&Wine. Thanks to her passion, dedication, and determination, combined with her acquired expertise, she became the first and only manager of Rozbrat 20 – a restaurant that has undergone several transformations, including changes in its head chefs.
Before joining Ferment Group, she worked at the Italian restaurant Boscaiola, which set the trend for Italian ristorantes in Warsaw. It was a unique place, offering a true interpretation of Italian regional cuisine.
Ewelina is one of the pioneers of managerial roles in Polish gastronomy. With her strength, charm, and professionalism, she paves the way for other women to excel in this challenging position.
