Chef, creator, and owner of the top-rated signature restaurants Ceviche and Tuna in Warsaw, both recommended by the Michelin Guide in a short time. He is an MSC ambassador, representing the global organization for sustainable fishing. An expert in fish and seafood, he is also a culinary mentor and trainer of chefs.
He is the first Polish Top Chef, winning the show of the same title on Polsat, and a well-known TV personality featured in hit programs such as Zamiana Szefów, Zawód Szef Kuchni, Hell’s Kitchen, as well as a culinary expert on the morning show Halo tu Polsat.
His culinary education began at the Higher School of Gastronomy and Hospitality at Escuela Internacional Islas Malvinas in Mendoza. In the following years, he trained alongside Italian chefs at the prestigious Sale & Pepe restaurant in Florida, progressing through all levels of professional culinary training.
He founded and led the signature restaurant Salto at the Rialto Hotel in Warsaw, which also made its way into the Michelin Guide just a few months after opening.
Originally from Mendoza, Argentina, Martin Gimenez Castro inherited his passion for cooking from his parents. He has been living in Poland for 17 years.
