She discovered her passion for cooking at the Manor House SPA Hotel**** – Odrowążów Palace***** (currently Best SPA Hotel SPA according to Perfect SPA Awards), where she has been working for 20 years.
She loves experimenting, combining different flavours, and is keen to reach for products that are forgotten today or have not been popular in gastronomy so far. She likes to work with local, created from scratch, which ties in with her love of vegan cuisine.
Manor House’s vegan menu was one of the first among hotel restaurants in Poland and has been awarded the V quality mark for years, confirming that it is suitable for vegans.
She is also fascinated by Old Polish cuisine and discovering traditional recipes, from which she draws inspiration for her own recipes. Her culinary explorations have resulted, among other things, in the creation of a seasonal tasting menu, ‘Flavours of the Forest’, which includes dishes containing edible gifts of nature, such as mushrooms, ferns, pinecones, young birch leaves, maple ‘noses’, lime buds, lilac flowers, seasoned with pine salt, spruce sauce or honeys with forest flavours.
